To start off we need to know what we’re getting into.

So, let’s get prepped:

Now that we’ve figured out how long our prep takes, we need to establish what actually goes into our delectable lassi drink.

Make sure you have your thick Red Cow Amrit Doi (plain yogurt) to begin with.

The ingredients we will need are:

  • 2 medium cups of Yogurt (the 200g of Red Cow Yogurt is the perfect size)
  • 3 regular tablespoons of finely powdered sugar (you can use a blender to achieve this consistency)
  • 1 full tablespoon of full cream/fresh cream/malai
  • Some chopped dry fruits of your choice and nuts (preferably pistachio, cashews and almonds, chopped).
  • Cardamom or cinnamon powder for added flavour.
  • 1/4th of a cup of cold water
  • A few ice cubes

Now that we’ve covered the basics in the ingredients, we can move on to the tools we will need to create the lassi:

  • One measuring cup.
  • One large pouring jug to combine the ingredients in.
  • A whisk or hand operated blender (a whisk is preferable).
  • Tablespoons for measuring and stirring.
  • One serving jar, for presentation.
  • Glasses or cups of your choice, to serve in.

Finally, we come to the actual process of preparing the lassi- and this is the fun part:

  1. Put the yogurt in the jar: To begin, set your large pouring jug on the counter and add the yogurt into it. Make sure the yogurt has a thick consistency initially.
  2. Whisk the yogurt: For the next step, grab your whisk or hand operated blender and whisk the yogurt until it has a smooth dropping texture. If you do not have a blender or a whisk, a fork works just as well.
  3. Add the cold water: The cold water should be added as per your discretion to modify the thickness to an acceptable consistency as and when you feel it is necessary. (of you are adding ice cubes to the lassi later, you should add less water, as the ice will melt and dilute the drink further)
  4. Add the sugar: Now for sweetener’s, you can add the powdered sugar in. Honey and other sweeteners are good/healthy substitutes for this step, so don’t worry if you are on a diet!
  5. Now for the spice: Following the sugar, you can add the cardamom or cinnamon powder for extra flavour.
  6. Whisk again: Then, whisk the mixture again. You will know when to stop as you see froth begin to form at the top of the lassi.
  7. Garnish with the fresh cream: Now that we’ve prepared the lassi, it’s time to add in the fresh cream/ malai for that additional richness.
  8. Almost there: Your lassi has finally been made! Now, to serve, take your jug and pour the lassi mixture carefully into the serving jar.
  9. Decorating time: Now it’s time for the decorating: grab the chopped fruits and nuts you have and garnish the lassi with finesse.
  10. Serve it in a jar: Once you’ve successfully prepared the serving jar, pour the delicious summer beverage into your cups of glasses to serve
  11. Add the ice: Lastly, do not forget to add the ice cubes to maintain the drink’s cool form. (You can add ice cubes directly or crush the ice in a blender first, according to your preference).
